1 Pork Tenderloin
12 small yellow potatoes
½ cup Mrs. Fromley’s Blueberry Rhubarb Dessert Jam
½ cup Raspberry Vinegar- Trader Joe’s
2 tbsp Olive Oil
1 ½ tsp Luvafoodie Smoke House Spice
½ tsp Luvafoodie Garlic Lovers Spice
1 package fresh Rosemary
½ cup fresh blueberries
Preheat Oven 350 Degree
Rub pork tenderloin with 1 tbsp. olive oil and Luvafoodie Smoke House spice.
Put on baking sheet in oven for 30 minutes.
Coat potatoes with olive oil and 1tbsp. Garlic Lovers spice wrap in foil and put in oven for 3o minutes.
In a small saucepan heat over low heat jam, vinegar, and ½ tsp. Luvafoodie Garlic Lovers spice for five minutes, then set aside.
Remove pork tenderloin and let rest for 5 minutes before slicing.
On a serving plate, arrange sliced pork tenderloin and potatoes.
Garnish with Rosemary sprigs and blueberry.
Top pork tenderloin with blueberry rhubarb sauce.
